This was my solution to feeling beyond overwhelmed and exhausted: A rice cooker meal with clementine segments and a salad.

The rice cooker thing is basically an assortment of vegetables (red bell pepper, edamame, mushrooms, peas, scallions), rice, water, some sauces I had (soy sauce, oyster sauce, sesame oil), and some chopped smoked tofu cooked in a rice cooker until done. I topped it with sesame seeds and, when eating, vegan sriracha mayo.

The salad was stuff in my fridge--romaine, grape tomatoes, cucumber, yellow bell pepper, and avocado--with a homemade miso vinaigrette (kind of following this recipe).

It wasn't the best thing I've ever eaten, but I mean that literally--I wasn't disappointed by this. I knew what it was likely to be like and I was right. It got the job done, without being unpleasant. Right now that may be the extent of my abilities.

I've had to turn comment moderation on because there has been an absolute onslaught of spam, but I want to say I appreciate everyone who commented last week (or at least, the real people who did!). I don't know how things will turn out, and I'm still disoriented in some ways, but I'm holding as steady as I can.
